I can never leave the house without having breakfast. It’s considered the most important meal of the day, and a nutritious and filling breakfast can help energize the body and kickstart the metabolism. If I skip it, I tend to be less productive and get easily tired.


A fantastic breakfast ingredient is the humble potato. Not only are they delicious, but potatoes also contain complex carbs – the good carbs! Carbohydrate is the primary source of energy for the brain, heart, and muscle. It’s an essential nutrient, so please don’t skip the carbs because our body needs them to function properly.

Aside from complex carbs (26g), a medium potato with skin on (148g serving) is also an excellent source of vitamin C (27mg), and a good source of potassium (620mg), protein (3g), and dietary fiber (2g). It has only 110 calories per serving and is free of fat, sodium, cholesterol, and gluten. 

Potatoes are one of the staple foods at home. They’re our go-to veggie because they are nutrient-dense, readily available, affordable, highly versatile and easy to prepare. It’s no secret that they are my favorite for breakfast, lunch, dinner, and snack! They can be fried, baked, mashed, sautéed, roasted, the list goes on.

I used U.S. dehydrated standard potato flakes for this dish. Dehy (short for dehydrated) can be quickly reconstituted into the best and fastest-made mashed potatoes ever! It’s an ingredient that can be used in a wide array of dishes like soups, stews, and sauces. It also adds texture and make breads and cakes fluffy.
